This wonderful 9 hectares domaine, based in the town of Nuits-Saint-Georges, has been cultivated by the Chicotot family for seven generations. George has now “retired” and the Domaine is run by his wife Pascale and son Clément. They have not used herbicides or pesticides for over ten years and their vines, some of which are trained en gobelet, produce low yields. After a severe selection and traditional fermentation, the wines are aged for 18 months in barriques – only about 10% of which are new. During the maturation process, they tend to rack little to retain the natural carbon dioxide, rather than adding higher levels of sulphur dioxide. These are lovely, elegant, pure, seductive wines.
